I feel like I haven't updated our blog in forever! We haven't taken any pictures recently and I'm always a little reluctant to post without pics, but I'm gonna do it anyway because I have some extra time and I want to brag about some muffins that I made last night (see below).... :)
My Dad was in Salt Lake City for business and was able to come down to Provo to see his 2 beautiful daughters and his handsome son-in-law! :) I totally meant to take pictures, but I completely forgot and I'm really bummed! But it was a really fun night! We went to Cafe Rio for dinner and then came home and had really yummy pizookies and just hung out and talked. It was so fun to see our dad and I can't wait until him AND my mom come out here to visit at the end of October!
Best friend Krystle Cherie Lowen came down to Provo and a bunch of us girls went to free ice cream day at Cold Stone! Then of course we all watched The Office season premiere.
Aaron and I went out to dinner and then went to the BYU Museum of Art to look at the new show they have up right now. I love that Aaron likes looking at art, and kinda funny that he likes looking at art probably more than I do! Then we went to redbox and got The Bucket List (booooooooooring movie).
Saturday night we went to the Sego Art Festival and we thought it'd be like a family kind of event, but it definitely wasn't and we didn't last very long there. I guess we just aren't indie enough, thank goodness.
Staci came over for dinner and after dinner we made peanut butter cookies (3rd day in a row...). SUPER EASY RECIPE! (1 cup peanut butter, 1 cup sugar, 1 egg--bake at 350 for 8 minutes...best peanut butter cookies you've ever had!!!!)
Aaron went to the library and I was supposed to be at home reading and doing homework, but I just wasn't in the mood and I felt like baking something. So I made applesauce muffins, and I'm not kidding....better than costco muffins! And (kind of) healthy too! Here's the recipe:
1 cup applesauce
3/4 cup brown sugar
1/2 cup oil
1 3/4 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
a little bit of nutmeg
ALSO...I added a little crumb topping (duh!) and I'm pretty sure that's what makes them so good...
4 tablespoons melted butter
1/4 cup brown sugar
1/2 cup flour
Combine applesauce, brown sugar and oil in a bowl. Mix well. Mix the dry ingredients in another bowl, and then stir in the applesauce mixture. Blend well. Fill muffin tins about 2/3 full. Add crumb topping. Bake at 350 for 20-25 minutes.
