The past 2 times I've been in Arizona visiting Aaron's family, my sister-in-law Mary has made the most delicious granola. And I always feel bad because I'm pretty sure I've eaten way more than my share both times....but I just couldn't help myself! This past Christmas when we were there, I finally got the recipe and I've already made it twice this week. I've halved the recipe both those times, but still...we love it and I thought I'd share it with you guys in case you've been looking for a granola recipe (???) or you just want to try something new and super easy. Here is the original recipe that Mary gave me, and my changes are noted below:

5 cups quick oats
1 cup coconut
1 cup almonds (or any other nut - optional)
1/3 cup sunflower seed (optional)
1 cup powdered milk
1 cup honey
1/2 cup olive oil
1 tsp. salt
1 tsp. vanilla
1/2 c. chocolate chips/raisins/etc. (optional)

Mix dry ingredients. Add wet. Spread onto greased cookie sheet. Bake @ 300 degrees for 30 minutes.

**Notes: I used old fashioned oats the second time and it's still fantastic, I use Zoom Quick Hot Cereal instead of the coconut....just because we don't buy coconut and I figured I'd just try a cheaper alternative?, I roughly/finely chop the almonds, I don't use sunflower seeds, and I don't add the chocolate chips/raisins/etc.
