confession: i. love. avocados.! my love for avocados started about 2 years ago [around the time we moved to california] and i keep thinking i'll get sick of them one of these days, but that love is definitely still going strong. i eat them with my lunch almost every single day, and last week i documented some of my favorites....01. fresh grape tomatoes from my neighbor's garden, spooned avocado and shaved parmigiano-reggiano cheese.
02. egg and cottage cheese omelette with sliced avocado.
03. leftover quinoa, sun-dried tomatoes and cubed avocado.
04. kale greens [i love the crunch!], sliced avocado, shaved parmigiano-reggiano cheese, with a lemon-olive oil dressing.
05. mashed avocado and raw milk gruyere cheese on top of heirloom tomatoes.
*salt and pepper were added to all of these.
i love the simplicity of all of these meals, and if i had to choose which lunch was my favorite....it might have to be #03. sun-dried tomatoes get me every time. any other yummy ways to eat an avocado that i should know about?? :)

I started eating avocados fairly recently too however we (also) moved to California about a month ago, and I've been eating them non-stop! They're so creamy and delicious, I'm definitely going to try some of your ideas!
ReplyDeleteOne of my favorite ways is almost half guacamole and half tartine. Mashed avocado with salt, pepper, red pepper flakes and a squeeze of lime, spread on crusty toast. So good!

ReplyDeletei love avocados too, but i totally have a curse. about 90% of the time i buy them something is seriously wrong and they have a bad taste... i finally realized that avocados from costco are somehow always good, consistently. what's up with that?

I have a weird relationship with avocados, but I add them to things all the time (in tiny diced form to avoid the texture/get the healthy benefits). I recently made a salad with quinoa, mango, and red pepper and added avocados...it was insanely delicious.

ReplyDeleteLOVE Avocado! My husband used to own a pizza restaurant... one of the specialty pizzas was my absolute favorite! It had olive oil for sauce, mozzarella cheese, sliced tomato, garlic, chicken and then after you cook it, cold sliced avocado on top. So good!

In Brazil avocados are sweet. They are used in desserts, ice creams and milkshakes (it's an acquired taste, I think, I'm used to eating it as a savory fruit myself).
