

our kitchen is overflowing with citrus and we are loving it! we've been stocking up on our vitamin C, trying to stay healthy and finish this month strong. my new favorite is baking a grapefruit with cinnamon and honey, and turning it into some kind of delicious candied baked good. i actually had the thought today to throw a dab of butter on top....maybe even a full-on crumble topping...but i restrained. i figured it had to stop somewhere, right? :) here is the super simple recipe that makes such a difference....1. halve grapefruit and loosen the sections with a knife.
2. drizzle honey on top and in the center.
3. sprinkle with cinnamon.
4. bake at 375F for 15 minutes.
*can't believe january is already half over! i can already tell 2012 is going to go by way too fast.
