4 ways to eat brussels sprouts.

a couple weeks ago my friend asked me if i had any brussels sprouts recipes on my blog, and then the next day my sister asked me the same exact thing! which i took as a sign that the "recipe" i shared in one of my previous posts probably wasn't cutting it. :) but i was happy to oblige, so here are 4 ways to eat brussels sprouts!....

ONE. raw shredded brussels sprouts and kale, tossed with fresh lemon juice, olive oil, salt & pepper, with pecorino romano cheese and pine nuts. ***MY FAVORITE!***
TWO. roasted halved brussels sprouts with roasted almonds & crispy strips of prosciutto.
THREE. blanched brussels sprouts with arugula, alfalfa sprouts, and avocado, with homemade lemon-dijon dressing.
FOUR. brussels sprouts kebabs! roasted and drizzled with a balsamic vinegar reduction (inspired by this).
**number one was definitely my favorite, if you couldn't tell. :) i almost always prefer my vegetables cooked, but i think brussels sprouts might be the exception. it was my first time eating them raw when i made this, and it kind of blew me away. so if you don't try any of these, at least try number one! if you have another favorite way to eat brussels sprouts, please share!

p.s. is it possible to overdose on vegetables? because aaron and i are both convinced it happened to us yesterday. the brussels sprouts may have had something to do with it haha

  11. I use to absolutely hate brussels sprouts growing up and it's only been recently that I've been brave enough to try them. And… I actually quite like them!

  17. I used to hate brussel sprouts but now I think they're great! That first option looks to DIE for. I love pine nuts, and lemon! And kale. Perfect combo. I'll definitely be trying it, thanks girl!

  19. We love Brussel Sprouts at our place (I'm always amazed at how many people can't stand it). I have a few in the fridge and really looking forward to trying them with the balsamic vinegar reduction. I hope my come out looking as good as yours did!

  26. I'm so glad I kept looking for recipes and found your blog! I have a bunch of brussel sprouts and am waiting for my first batch to come from oven (roasting them with olive oil, balsamic, and salt), got curious about if I could eat them raw and here I am!! I'm totally psyched because I'm totally into kale too...juicing, smoothies, etc. Tomorrow a salad!!!
