4 ways to eat brussels sprouts.

a couple weeks ago my friend asked me if i had any brussels sprouts recipes on my blog, and then the next day my sister asked me the same exact thing! which i took as a sign that the "recipe" i shared in one of my previous posts probably wasn't cutting it. :) but i was happy to oblige, so here are 4 ways to eat brussels sprouts!....

ONE. raw shredded brussels sprouts and kale, tossed with fresh lemon juice, olive oil, salt & pepper, with pecorino romano cheese and pine nuts. ***MY FAVORITE!***
TWO. roasted halved brussels sprouts with roasted almonds & crispy strips of prosciutto.
THREE. blanched brussels sprouts with arugula, alfalfa sprouts, and avocado, with homemade lemon-dijon dressing.
FOUR. brussels sprouts kebabs! roasted and drizzled with a balsamic vinegar reduction (inspired by this).
**number one was definitely my favorite, if you couldn't tell. :) i almost always prefer my vegetables cooked, but i think brussels sprouts might be the exception. it was my first time eating them raw when i made this, and it kind of blew me away. so if you don't try any of these, at least try number one! if you have another favorite way to eat brussels sprouts, please share!

p.s. is it possible to overdose on vegetables? because aaron and i are both convinced it happened to us yesterday. the brussels sprouts may have had something to do with it haha
