irish soda bread and wednesday morning brunch.

i made irish soda bread earlier this week (in honor of the upcoming holiday!), and used it to make pesto & white cheddar paninis yesterday for a little wednesday morning brunch. the irish soda bread also ended up being part of my afternoon snack and dinner, but that's neither here nor there. ;) i used this recipe for the bread, and the raisins were so perfect with my extra extra extra sharp white cheddar cheese (the sharper the better, in my opinion). it was stinking delicious!

in past years i haven't ever really had a special food for st. patrick's day that i only make once a year for the holiday, but i think this irish soda bread made the cut. and i like it even more that there was no pressure to use food coloring. i made green pancakes one year, and i usually looooove pancakes, but i honestly had a hard time eating them...just because they were green! any other fun st. patrick's day foods i should know about??

  5. I've been trying to decide if I want to do an Irish meal this weekend, and since I'm not big on meat (corned beef...) I might just give this bread recipe a try. Thanks for sharing your lovely photos!

  11. I was planning to make a twist on key lime pie (it's a no-bake cake that involves cool whip and lime jello). It's green, but it's SUPPOSED to be green, so it doesn't look unappetizing like green pancakes.
