Great news! Emma from
Emmadime asked me to be a new contributor on her blog (!!), and my
first post is up today! Check out our new
SIMPLY WHOLESOME series
HERE. I'm sharing how to prepare dried black beans "from scratch" and the benefits of using dried beans over canned beans. Plus...a recipe for black bean veggie tacos!
Mexican food has really become my comfort food since living down here in southern California. If you are ever looking for Aaron and me on a weekend night (or any night!), you can most likely find us at a Mexican restaurant....
fighting over sharing a basket of chips & salsa, Aaron with some green sauce enchiladas, and me with a taco or two. We just love it. The black bean veggie tacos were so delicious, and I had soo much fun making them, partly due to the fact that I got to use fresh cilantro....I swear nothing smells better than fresh cilantro.
Anyways, head on over to
Emmadime to see some more photos and get the
recipe(s)! Thanks so much for having me, Emma!
yum! i'm definitely going to have to try this out!
ReplyDeletegreat post!

I love the smell of cilantro too. They should make air fresheners that smell like it. :)
ReplyDeletei think so too! air fresheners, perfumes, house cleaners...anything! :)

Mmm.. I love Portland for many reasons, but they just don't know how to do Mexican food right. I always miss my Southwest upbringing when I'm craving Mexican.
ReplyDeleteAnd hooray for your new blog gig. Can't wait to see what you coming up!
great guest post, girl!
ReplyDeleteand mexican food is my comfort food too. so delicious!!! i'll have to try these sometime ;)
xo TJ
Mexican food is my favourite too but sadly aussies don't really do great mexican. That was one of my favourite things about traveling through the southwest of the states, so much yummy food!
ReplyDeleteand now i know what we're having for dinner tomorrow. :)
ReplyDeleteI'm so hungry now. I want to eat the pictures!
ReplyDeleteI love BEANS (well, I'm Brazilian...) and tacos. It's nice to see how you make them, because I used to use my pressure cooker, but it's not working right anymore :-(
ReplyDeleteI'm glad I found another alternative. I had no idea how I'd survive without beans.
They look so pretty.
ReplyDeleteOnce in a while I bake for my friends a big oven plate of a Swedish pancake and make a few fillings (mostly savory). Maybe they are Finnish-kind of tacos (:
Sunny Tuesday morning greetings.
This is so wonderful! Eat Sleep Cuddle and Emmadime are two of my absolute favorite blogs. Such a perfect fit. Congratulations on your new series!
ReplyDeleteMmm you are making me hungry!! I often forget (living with a very meat eating boy!) that you dont actually need meat to put in these kindsv things and make them delicious.
ReplyDeleteCongrats on the contributing, i shall have a little goosey gander xxxx
perfection. you deserve to be on emma dime's blog -- 100%. xx
ReplyDeletei've always wanted to attempt making homemade black beans - or refried beans! i feel like you must have a lot of patience for them. your tacos look delish!
ReplyDeletei loves taco too :) amazing photos :)
ReplyDeletethat is awesome! will definitely have to stay tuned to this series. i too have been trying to eat all whole foods & have been considering trying dried black beans. i've read that the longer you soak them, the more toxins are removed. off to check out your feature!

ReplyDeleteYummy! I adore Mexican food, so tasty! We are primal so don't eat beans but I will make an exception for Mexican. Yuuuum!
