


As if my love for kale was not enough, now I have yet another way to ingest that wonderful leafy green...in the form of pesto! I had been wanting to try making kale pesto for forever now, so I finally did it this past weekend, with the solicited help of my husband Aaron (since I'm still kind of terrified of our Vitamix blender, and up until yesterday had never even used it unsupervised! ha).
Unfortunately, the recipe I used on Sunday called for walnuts, which I think was the cause of its lackluster-ness, so I made another batch yesterday (by myself!) with some good old-fashioned pine nuts and it was much, much better. I'm so glad I gave it another try, and I'm happy to report that nothing/no one was injured on my solo run with the Vitamix. (I was worried...) I put the kale pesto on some brown rice noodles, and added my other food addiction (avocado!) with some salt & pepper, and in true kale form...it was wonderful. Now the recipe for all my fellow kale-lovers out there....
KALE PESTO
3 cups chopped & stemmed kale (i used dinosaur kale)
1/2 cup pine nuts (i used the dry roasted kind from trader joe's)
juice of 1/2 a lemon
1 garlic clove, smashed
1/4+ cup grated parmigiano cheese
salt & pepper to taste (i used...A LOT)
olive oil to desired consistency (1/2 - 1 cup)
**Directions will vary depending on what kind of blender/food processor you have, but I put the nuts & garlic in first to chop them up a bit, then added the rest of the ingredients and blended away!

Oh my. Oh MY! This sounds heavenly! I must try this...I think I have kale in my veggie drawer, or maybe it's collard greens. I'm not sure, but either way, I'm MAKING this!

yes! thank you for this! i have four bunches of kale in the garden that are going to need to be harvested soon & i was trying to think of other ways to use it besides kale chips and raw in salad. love this idea, and love it combined with whole grain pasta & avocado. heaven!

You have reminded me all about kale, which I loved to munch on many years ago when I lived in Edinburgh and received weekly vegetable boxes from a local farm that always brimmed with kale. ReplyDeleteI had to laugh because my Vitamix stayed on the counter for 3 days because I was afraid to try using it...finally my husband went over and turned it on!! I don't do machines very well. But I am sure you can put all of those pesto ingredients in the Vitamix at the same time...wet ingredients in first and whiz it in a heart beat!!
