crush of the week // peanut butter + honey granola.

To make a long story's been a comfort food kind of week. Which, for me, means breakfast food! I got off to a really good start on Monday, and have also been crushing on my latest concoction Peanut Butter & Honey Granola (the perfect combination of three of my favorite comfort foods--peanut butter & honey sandwiches, cereal, and oatmeal raisin cookies. ha!). It's my favorite kind of granola--chewy, chunky, and simple ingredients...and my "crush" could probably be considered an obsession at this point! I first made it a few weeks ago just by tweaking my regular granola recipe a bit (see below), and wanted to share in case there are any other PB&H lovers out there... Plus, I don't know if I've mentioned enough times how much I love foods with honey in them?? ;)

2 cups whole rolled oats
3/4 cup almond meal
1/2 tsp salt
1/4 cup olive oil
1/2 cup of your best honey
1/4 cup [fresh/all natural] peanut butter
1/2 tsp vanilla
*mix together dry ingredients, then add wet and mix together. spread out on parchment paper on a baking sheet. bake at 300 degrees for about 20 minutes (it will get golden brown around the edges). let cool completely, until the granola has set. makes 4-5 servings.
**serving suggestion: in milk, with sliced banana, and an extra drizzle of honey just because.
